So checking around people I know, one thing most people do at the winter holiday season is bake cookies! nom nom 🙂 Homemade cookies make an easy and inexpensive gift and with the tight budgets we live under today, cheap is good!! Today we are sharing Cake Mix Cookies with chocolate and/or peanut butter chips!
We were given the opportunity to test out Teresa’s Silicone Baking Mats – these mats are awesome! I have used them for several batches of cookies and a prime rib so far and I am in LOVE!! Clean up is so easy and these mats work so well – whatever you cook on them just slides right off. I am so glad to have these in my kitchen! When Christmas really gets here I know these will be a time saver!
We usually bake several dozen of the family fav cookies each holiday but today I want to share a new to me recipe – Cake Mix Cookies. I know I googled it and they are all over but I hadn’t paid attention until the son brought some home from a school and offered me one. One of his professors gave some to the class and when I tried one I was like oh yeah, I need these!! So soft, so full of flavor and full of chocolate chips!! Who can resist?
So super easy!! Cake mix – any flavor (I did butter and devil’s food in this batch), chips (any flavors!! we have milk chocolate in the butter and peanut butter in the chocolate), 2 eggs and 1/3 cup of oil. That’s it!! Grab a spoon and mix the oil, eggs and cake mix together (it will get hard to stir) and then add in your chips – about a half to 3/4 of a cup (but I won’t tell if you add more).
Drop by teaspoon or tablespoons (I like BIG cookies) onto your silicone baking mat and bake at 375 degrees for 8 – 10 minutes.
The cookies will still be a bit pale but you will see a bit of browning around the edges. Leave in longer if you want a crunchier cookie – these are deliciously soft cookies!!
The devils food did not want to mix up right so we ended up adding a couple tablespoons of milk to get it smoothed out. Then we added the peanut butter chips. So great with a cold glass of milk. nom nom nom!! I saw a comment somewhere that making the chocolate cake cookies into balls and rolling them in powdered sugar before baking is scrumptious, so that is on my list to make next! Then lemon and maybe birthday cake and do they still have the blue raspberry mix?!?
